Thanks Matt! Definitely give it a shot! We did scrap cider vinegar last year which was super easy. Going to try the real thing this Fall, but last years batch lasted us until now so definitely worthwhile.
We’ve also accidentally grown a vinegar mother by storing strawberry tops in ACV over a year, so you can really mess around with vinegar and get something cool. I’m hoping to get Pascal Baudar’s Wildcrafted Vinegars book one day to do some experimentation

Hi there, so excited to finally join the permies community! Recently bought our first home in southern Ontario, Canada and working to transform the existing old school landscaping into a naturalized and productive space.
We’re big veggie gardeners but haven’t had the chance to plan out perennial beds before and are planning to incorporate permaculture practices where we can throughout the design process! Goodbye Ivy, hello food forest!!
Aside from that, we are big fermenters and brewers. So far we’ve have success with mead and vinegar (read: failure with cider) so looking to learn more in those forums as well.
We also recently got a big ol bin of worms and two English angora rabbits who all help us feel like little homesteaders. This winter I’m looking forward to learning how to spin and felt Also looking to learn more about natural dyeing and getting a little setup going there.
In the future, we dream of owning chickens and honeybees so will definitely be lurking those forums as well.
