Hi Matt,

As a canning newbie, it's a good idea to follow a recipe.

A recipe will help preserve a successful season's tomato harvest, with jars that sealed, with contents safe to eat, with a pleasant taste and texture.

If you are able, hands-on experience is helpful.  I took a class offered by our CSA, then offered to help folks when they were putting up their own produce.

I 'm on 1+ acre in western Volusia County.    About 45 minutes from New Smyrna Beach. About an hour from the house of the mouse.

Listening to a podcast about DE.    Off to get some from Ace Hardware.    As soon as it is dry..  KILL red ants, DIE !!

I signed up while listening..   Retired from many things.   Reforming a "black thumb of death"   Looking for simple, low tech, low maintenance, natural ways to do stuff.

Stuff like fruit trees,  growing enough food to eat, chickens, bees, fences, cooling,  figuring out if a rocket heater (winter nights get cold) can be made to work in a small  70 yo wood house.
