hello there! very new here but i'm a baker by trade and i've worked with wood fired ovens but have not built one. my bakery caught fire (whoops) and they are removing the production wood fired oven so i'm looking into building one of my own at the community center to keep the fire alive. i'm going to try to reuse some of the fire bricks from our old oven but i've still got to see how viable that is.
My goal with building a wood fired oven is to be able to produce around 200 loaves of bread across the span of no more than one to two days. I'm wondering how many loaves of bread you've been able to produce in a single day with an oven that size; with the follow up question of if I wanted to do maybe 100 loaves a day how big of a hearth should I aim to build?
