I'm currently drying some fermented blackberry tip tea. I haven't tasted yet but it smells very good.
I'm planning on fermenting wild strawberry and cherry leaves soon as well.
Yaupon Holly isn't native in the pnw but is too a lot of the US and contains caffeine.
