there are two types of potatoes: determinate and indeterminate (just like tomatoes). The determinate variety (often called early potatoes) will set potatoes at the same level as the seed potato. There is no need to hill them. The indeterminate variety (late potatoes) will set potatoes all along the stem, if hilled as in the illustrations above.
