If you keep your salads up in raised beds or in a cold frame/hoop house, you should be good to go! Or as others have said, right after planting/transplanting use a little removable border. Runner ducks, at least, are hopeless at jumping but they are a bit taller and able to get to higher plants. The borders keep them at bay until things are tall enough.
