I was hoping for seeds but they turned out to be blooms and fell off soon after blooming.
I dug the potatoes just before our first killing frost but brought in a cluster first.
We enjoyed the blooms for awhile.

Those clusters look more like developing seed pods than new flower buds. Sweet potato seeds usually form inside small green pods that dry and turn brown when mature. Have you seen any pods starting to harden or change color yet?
