My garden provides over 20kg per harvest. As there is a high water content I recommend dehydration before storage.
The processing is to thoroughly clean and remove defects. Mince in a food processor. spread not too thickly on trays.
Dehydrate, as dehydration progresses repeat the food processor step as many times as you can to reduce the particle
size and hasten the dehydration time. When satisfied with dehydration process to a powder in the food processor.
Recommended equipment:- Vitamix or equivalent food blender. Sedona multi tray dehydrator. Line the SS mesh trays
with baking paper. frequently move the product on the tray to prevent bonding to the paper.
Store glass jars in Cool dark place. I place in the freezer.
Volume reduction approximately, one tenth of fresh root stock, so keep this in mind when using in kitchen cuisine.
May be used in almost all food preparations to enjoy the health benefits.
