Zaytuna Farm is a permaculture demonstration farm and education centre in Northern NSW, founded by Geoff and Nadia Lawton. We offer immersive face-to-face permaculture classes, workshops, farm tours, and internationally recognised Permaculture Design Certificate (PDC) courses focused on regenerative living, composting, food production, water harvesting, soil building, and ecological design. Students visit from across Australia and around the world to gain practical hands-on skills in sustainable agriculture and permaculture. We're excited to be running our 2 Week Permaculture Internship at the Greening The Desert Project in Jordan, 22 November to 3 December 2026.

The internship is designed for people who've already completed their PDC and want to put that knowledge into practice. The project sits in the Dead Sea Valley, close to the lowest point on Earth, with intense heat, arid soils and very little rainfall, so every skill you learn here has been tested in some of the toughest conditions there are.

Over two weeks, you'll spend around 80 hours working alongside our team, combining hands-on practical work with theory sessions. On the practical side, you'll build wicking bed roof gardens, maintain the food forest through chop and drop, pruning and mulching, work with small animal systems, make compost, compost tea and natural fertilisers, and help with the desert vegetable gardens, plant nursery and reed bed systems.

Theory sessions cover water harvesting, landscape rehabilitation, greywater systems, solar power and hot water, rocket stoves, mudbrick and straw bale building, aquaponics and more.

Camping and shower facilities are included, with a self-catering kitchen on site. You'll finish with an internship certificate signed by Geoff Lawton.

We're excited to be teaching our Permaculture Design Certificate course at the Greening The Desert Project in Jordan, 8 to 19 November 2026.

The project sits in the Dead Sea Valley, close to the lowest point on Earth, with intense heat, arid soils and very little rainfall. It's one of the most challenging places to practise permaculture, which is exactly what makes it such a powerful place to learn it.

Over 10 days, Geoff Lawton will take you through the full 72 hour PDC, with a strong focus on dry climate design: harvesting and holding water in the landscape, building soil where there's very little to start with, creating shade and shelter, and establishing productive food systems in drylands.

You'll see these strategies working all around you on site, from rainwater harvesting earthworks and an arid climate plant nursery to wastewater recycling. Each morning there's also the chance to join hands-on sessions on the farm.

The course is co-hosted by Zaytuna Farm, and certificates are issued in association with The Permaculture Research Institute Australia.

I wanted to share that enrolment is now open for the 2026 Online Permaculture Design Certificate (PDC) with Geoff Lawton and the Discover Permaculture teaching team.

The first course materials have just been released, and students from around the world are beginning their learning journey together.

This hybrid online PDC combines self-paced study with a global cohort experience, allowing participants to learn at their own pace while engaging with fellow students, teaching assistants and instructors throughout the course.
