Very glad to find you folks. I am a big fan of the Weston A Price group. They and Sarah Pope have taught me a lot about health and nutrition.

I have been making butter from my raw milk, but I haven't figured out what to do with the left over buttermilk. Can I culture it to make cultured buttermilk? or just what are others doing with it? Sarah may talk about it on her blog or some of the other bloggers that I follow, but in my searching I haven't come across any information about it. I guess people call it whey, too? Any help would be appreciated.

Like other posters, it would be wonderful to win a free conference admission. To whomever wins, congratulations. I hope to go someday. I am sure going to one of the conferences would be amazing!

The leftover white liquid from making butter is buttermilk, not whey (whey is more clear).

Yes, you can most certainly culture it. It is also wonderful for soaking flour for making (what else?) buttermilk pancakes

Just in case someone does have whey and they don't know what to do with it. My mother used it to soak her whites overnight before washing them . They'd always come out clean and fresh. A very friendly approach instead of bleach! Also making salsa and sour kraut ! I have made both and they are extremely good! You can find lacto fermented recipes online or in Nourishing Traditions, my personal food Bible!

Pancakes, waffles, biscuits, bread--they all work well with real buttermilk.

And if there is simply more than you can use--the animals love it, too.


Omnivore Warning. Vegans/vegetarians please ignore the rest this post.

Also great as a marinade to soak chicken or rabbit overnight before frying. It makes the BEST fried rabbit. If you are offended by that idea, sorry. But it is really really really good.

Ditto on the pancakes, biscuits and other baking ideas. I just freeze mine for later use. I very rarely use butter (mostly I use coconut oil) but when I do it has to be from raw milk. Then I put the buttermilk in containers in the freezer.

I'm glad this post caught my attention - I'm having meat/dairy/wheat loving guests in another week or so and had forgotten that I have frozen buttermilk. I'll thaw some out to make biscuits and my husband can make them pancakes.
