Cole Ward's 'Gourmet Butcher' is available. I totally forgot CG published this text. I purchased it before I became a meat cutter and still use it. For anyone generally interested in meat, it's sourcing, butchery, etc. It's a must have and I simply cannot say
enough about it. The DVD with an 800 page step-by-step cutting guide for
beef, lamb, pork and
chicken would be worth the sale price alone for any homesteader.
