If they're sprouting go ahead and plant them up, mine started to sprout at 3 months roughly.
I took the bag out of 35F tempatures in my unheated porch and brought them into my 65-70F grow area near my furnace for a few days.
I went from 2 seeds sprouting of 20 to all sprouting but 2 in a week.
Now the trick is to keep them alive til the ground thaws.

You should plant those seeds as soon as possible, even if it's just in pots.
If you let the sprouts get long without soil, they can easily break off or rot.

Yes, my experience is that if I let apple seeds sprout long, they rarely survive the transition to soil. But they work pretty good from little pips like you show here.

And it is a pain to plant them when the rootlet gets too long. I speak from experience...it took a long time to plant them without breaking those rootlets.
