does anyone have a proven recipe for hoppin jack, if you never had it its a rice and bean recipe

I thought Hoppin John or Jack was purple hulls peas cooked with ham and served over rice.  I don't use a recipe to cook my peas. I have a great way to cook rice that comes out perfect every time.

I love red beans and rice. I don't use red beans because I use pinto beans.  Again I don't use a recipe.  After they are cooked I serve them over rice.

last time I had any that was real good it was almost like a cajun recipe with onion, celery and bell pepper, the trinity, but with other spices added that made it quite unique and very good one plate meal.

I googled Hoppin John and it has a colorful history.  It said it originated in Charleston, South Carolina.

Basically, an old man named Hoppin John sold it on the streets back in 1841.

Another referance said it was in a book and defined as "bacon and rice" as early as 1838 and that there are several variantions including your version.  

My grandmother always made it like I suggested.

Anyway, you version sounds like the way I will make it the next time since I love cajun food.
