Which way to make the Hugge beds (Hügelkultur)

I am not sure which way to site my Hügelkultur beds.

Attached are photos taken at 9.30 am with the beginnings of the beds.
We are thinking of hedging (see what I did here) our bets and and having muktiple beds going any all different directions.

Some detail: the short end of our plot is South and long side is east.
The prevailing wind blows from west to east.
The beds are in a very wet part of property. Need wellies to walk due to standing water. By summer it will be bone dry.

In Central Portugal. No rain in summer July&August.  Medderterainean climate. Zone 10a.

Using bramble, old logs and fresh pruned olive trees for the beds.  
Hope to have it high enough to plant a fruit tree on each bef and their feet stay dry. Then grow perrenials and dare I say spring and summer annual garden.



What do you think, which way should the beds go? Explain it to me like I am totally new to gardening. Please😀
