Is the forum aware of a cook stove that could take the place of a wood burning insert in an old brick fireplace or the process at which to turn a wood insert back into a useable fireplace?

Scott; Investigate rocket mass heaters , they have been retrofitted to fireplaces before. Search the rocket stove forum here at permies and i'm sure you can find info about doing this.

Fisher made fireplace inserts and also the papa bear had a rear exiting flue which could be run up a chimney and all Fisher stoves had a flat top that works great for cooking but no oven. I have used mine as an oven though by simply putting a wire rack on the top of the stove and using a cover. I also use a dutch oven on top of our wood stove.

Never heard of a wood cook stove insert though. As far as converting an insert to a wood stove, my neighbor heats his house with an insert just using it as a freestanding stove.

I agree. Here's the link: https://woodheat.net
