So, I'm going to be making beef jerky. It is supposed to keep at room temperature for 2 months. If I store it in the freezer for a few months, and then take it out, it should still store for two months at room temperature, right?

The reason I ask is that my goal is to have a backup, nonperishable food supply if the power fails. So once the power failed, the jerky would come out of the freezer. I would be careful to open it only after it had thoroughly warmed up, so that water does not condense on it.

We had a batch of jerky that DH couldn't eat.  It was in the fridge for a couple of months before I said "lets give it to the dog as treats", then it sat on the counter a month or so while I tore off about an inch to give to the dog.  I found one piece that looked a little moldy and threw it away, otherwise the dog loved her treats.

The point I am trying to make is that I think jerky will last a lot longer than is advised.  I had some store bought jerky that got lost when we move.  It was still good after three years.

We made jerky in June that was made to go into the freezer.  We put it in the foodsaver but the jerky poked holes in the bag so we had to wrap the jerky in paper towels then put in the foodsaver then we put that into zip lock bags.
