Morning. I did a ferment in brine from an online recipe (about 3 percent salt plus a small amount of vinegar) of some mixed hot peppers harvested this season. Been going two weeks or so now at room temp. Was about to call it done and make some hot sauce and loosk like in the craziness of the harvest I forgot to put water in the airlock like a genius. Extremely cloudy brew, almost milky white if you stir it but no mold or other colors and know clear white years unless its the cloud. Slight unpleasant under when first opening but peppers taste ok. Colors of the red peppers still bright, greens are muted but no slime on either. It is just that first whiff that seemed off but I am new to this.
Two questions.
1 Is that serious cloudiness a potential need to throw my babies out?
2 If not, can you make a femented hot sauce and add unfermented ingredients in the blending or does that defeat the whole business.
Usually I do my own research but life is upside down and I can't keep up this month.

Hey there. I am working a greenhouse design in Maine and was wondering if I understand correctly that your foundation was only 7 inches deep? No trouble with heave so far above the frostline? i am looking for a design that uses minimal amount of concrete. I have been thinking of just some beams at grade on bigfoot/sauna tube piers but found your design interesting.

Morning Forum. We are a couple living in Portland Maine. I have many years experience as a design/build woodworker (frame to cabinets) as well as twenty years in an commune behind me. I can also do some welding, masonry, and interests in all sorts of permaculture engineering and tinkering. My partner has many years as a plant/animal person (not so much serious livestock, more chicken and goat sort of goodness) as well as a course in permaculture design. Energy and passion for it all is our main offering and we are pretty easy to get along with. I have tons of work in the Portland Maine area but we don't have the credit (mistakes of early years) or the capital buy our own homestead yet but are having a hard time waiting and thought we would just throw this out there. Looking for any combination of circumstances that would allow us to put our resources into a homestead/farm. Maybe you have your sights on a large place but its too much for just one family. Or maybe you have a place and need partners to make it amazing. Portland rents are going nuts and we are putting thousands of dollars into American nothing every season and would rather be making something wonder-filled that we belong to. We lean anarchist/progressive and prolly would not fit with folks who base their lives in fear of folks who look or love differently than them. Beyond that we are open to all sorts of ways and approaches. If you were into Russian poetry and Irish folk music, well that would be pretty great as well. We would also be open to buying a place from anyone who could help us find some alternative financing style. We have the monthly income but aren't super tight with the banking community. Open books here, so ask any questions you wish.
