I give this workshop 8/10 acorns.
It is a great overview of site planning and dry stack foundation, which alone makes it worth the price.
Whereas a lot of cob instruction majors on the above-ground portions and leaves newcomers guessing as to how best to approach the subterranean, ultimately unseen, yet vitally important aspects, this series gives detailed instruction and key insights into trenches, drainage, materials, tools, measurements, etc.  I would refer folks to this instruction even when building a dry stack stone wall or fence.
If you feel like you have a good overview of cob building, yet underprepared to execute a reliable foundation, this would be a great resource for you.

I'm interested but this would have to be a future purchase for me. Meanwhile I'd like to know: is this essentially a set of learning materials for us to do what we want with, or is it an actual interactive course with assignments/projects, instructor interaction, etc.? And if the latter, are there specified times when it is offered? (Didn't see that in the description, but apologies in case I missed it.)

This is work-at-your-own-pace videos and downloadable documents.  I would suggest using this as static course material, and posting to https://permies.com/f/5/natural-building for interactive support and guidance from the permies community.  Lots of experienced folks, laypeople, professionals, architects, engineers in this group.
