Summary

Paul is talking apple orchards and commodity markets with Samantha

The story starts with a certified organic orchard growing the excellent Pink Lady apple, yet they can't afford to harvest and sell the crop, as the price they're offered is too low.

Paul says to make money you have to cut out the middle men and sell direct to the consumers, but then you can go a stage further and get people to come and pick the produce themselves, then you can be like Gert and just sit and watch.  

Selling to the commodity market is risky because when you come to sell, the sleaze factor means that you could be offered 30% less than last year because reasons.  Paul aims to eliminate the sleaze from his life.

Apparently it's true for almost all farming.  You're at the mercy of the buyer come harvest time, and even if you have a superb crop and get high prices, you barely make minimum wage, over the year, for the work you put in.
