Wholegrain Sourdough Without Fail

I recently got my very first mill and want to bake my own bread that is not a brick.  Fresh milled flour is way different from the AP flour from the store without the nutrients in it. I have yet been able to use all freshly milled flour in my morning homemade buttermilk biscuits that turn out as I want them to be.
