Robert I didn't find how they turned pork fat into lard, but that site is awesome!  The recipes read like a wonderful book.  I will be trying some of them for sure.  Thanks for the URL.

I too am stoked about making my own lard.  As an aside, my grandparents smoked their own hams and bacons and Gram even made a delicious chocolate cake using bacon fat from their own pigs. (Naturally smoked)  It's a well known fact that fat is where the flavor is , and what carries it, I'll be making my as soon as this @!#$@% snowstorm clears out and I can get into the village!

Thanks Kristin!  Your post brought back smells from my childhood when my mom used to "try out" beef suet or venison suet to use in making wild birdfood.  We didn't know about cracklins back in Maine, but since living in the south, I sure do and I will remember that.  I have the cast iron bot and a camp cookstove on the porch of my cabin in Colorado.  I'm good to go!!  I'll be sure and post the results.

Thanks Kristen, I'm glad it's simple, I believe it's chopped into pieces and boiled in water until the water is gone and the roasted, but I'm not at all sure about that.  Would you please provide me with your recipe?  Thanks.

I'm interested in purchasing pork fat from an organic meat market in the village.  Does anyone have a recipe for rendering the fat?

I've been cruising the forum/topic on selling raw milk.  I have found a source here in my neck of the woods for raw milk and am pleased about that.  It's expensive, but I feel it's well worth it.
Now, my questie is:  Does drinking  raw, uncooked milk do away with the side effects of pastuerized milk such as too much mucus production, etc. etc.

I'd really like some input on the benefits of raw milk.

Good research Leah.  So after reading that paper, it's easy to conclude that buying organic is the only way to be sure you're getting the real goods.

Kathleen, I don't remember where I first heard that about beans, but it's been around for some time now.  Personally, I would like to have the gov't. leave my food alone, I don't see that happening anytime soon. 

I too, love the heirloom beans and living in Colorado, we have many of them.  One good place to find heirloom beans is in Dove Creek, CO.  Adobe Milling Co.

That said, and being raised in the puckerbrush of Maine, I still order yellow eye beans shipped to me every fall.  I just love them, even though it takes forever to cook them at an altitude of 8,000 feet.

For once in my life I got smart while building my log cabin home.  I had the plumber put an on/off valve to the exterior faucet underneath my kitchen sink.  Last spring, after the garden was built in front of the cabin, I added the soaker hoses to it and connected them to the faucet.  I was able to water my 12' x 36' garden simply by flipping a switch in my kitchen.  It worked like a charm.
