What is the best fish to use when preparing fish stock? Any helpful tricks or suggestions for making a tasty fish stock?

Red snapper makes divine fish stock. Just be sure to simmer with the lid ON and also skim off every bit of foam as the stock is coming to a boil. This will make it taste a lot better.
