Thermometers

Howdy,

Looking forward to embarking on some rocket stove (cooking/radiant-heating/mass-heating, oven) experiments & would love some input on thermometers. I notice that some folks have what looks like a magnetic flue pipe thermometer for measuring surface temperatures while others allude to using candy thermometers or installing gauges that are mounted on long spikes and that can live permanently outside, say, an oven to give readings of inner temperatures.

Any words of wisdom, particularly regarding taking temperature readings during testing phases of the design process? Peripheral gold nuggets of knowledge & experience are equally welcome

I only have a cheap magnetic wood stove thermometer. lets me know how well the burn is going, but isn't terribly useful for design or troubleshooting purposes. for that, an instant read laser thermometer/pyrometer would be much handier. those are quite a bit more expensive to buy new, though, and plenty of folks have built functional rocket heaters without them.
