I sampled some bread & butter Junsai Pickles at EPIC:Farm to For in the Ozarks by Ozarks Small Business Incubator. West Plains, Missouri
Springfield Community Gardens recently helped create the Water Queen logo. Looking forward to trying the tea today.

Junsai also known as watershield or Brasenia schreberi, is an edible aquatic plant with a gelatinous coating that is popular in Japan and China.

From the Water Queen, "My goal over the next month, or so, is to 'teach' anyone who is interested what We are learning.

It will be as little 'raw', because we're doing and learning, at the same time. But hopefully,  it will help others start their Junsai Journeys, with more successes and less painful 'learnings'.
