Mulch or undersowing?

I'll grow corn in a patch were I will grow grapevines next winter. Mulch is not so sustainable (trucked etc.) and it often simply blows away. Could I undersow the corn with something, say clover? What is the best to undersow and is it done at the same time or sooner or later?

Subteranean clover handles heavy shade and is an annual that reseeds very successfully. Will give decent nitrogen release and some annual mulch.
