What kind of structure would you build to manage humidity?

I'm getting ready to move to my property in the best place in the world (the PNW, sorry Paul, Montana is uninhabitable for 9 months out of the year) and I was thinking of building a cob house with a RMH, but I've spent a few nights there in a tent and am now worried that an RMH would (usually) make any structure I put out there too warm, and if I don't have any heating it will usually be too *humid* which is to say, it would be the same air as is in the tent and that air is about the perfect temperature and too humid, at least this time of year, and I suspect for broad swaths of the year.

Is a cob house with an RMH that is used rarely still the right choice? What do I do about humidity for the rest of the year? Should I just get a dehumidifier? Does anyone make a dehumidifier that outputs potable condensate or is that a pipe dream?
