Has anyone ever made a greenhouse out of wine/beer bottles? I'm thinking bottles used as a sort of brick with mortar in between. It would heat itself as I had already looked into using wine bottles to make a hot bed. I think that same idea could be used in the greenhouse. What do you think?

I understand those forms of construction. I have seen them. That is not what I would do though. I'd be using this concept:

So here they say the air in the bottles is heated by the sun, it expands and goes out of the neck of the bottle to heat the soil. So I'm wondering if anyone thinks this concept would work to heat a greenhouse?

In the example you used the glass bottle heat the air and the air heats the soil. In this case the soil acts as a heat sink.
For this to work in a green house you might want to have a gravel bed or some heat absorbing material that the air from the bottles can warm.
This would prevent over heating in the daytime and cooling at night.
I have seen were a small fan was used to blow heated air into underground gravel/rock area to cool during day and heat at night.
