I read a recipe recently that suggested you never wash kale before storing it, as it may go limp on you. That got me to thinking there must be many more tips for proper storage of vegetables we could all learn from. Is it the same case with other fresh greens?
I know you should never put tomatoes in the fridge. It gives them what's called a "chilling injury" and can result in the loss of flavor, color, composition, and increased likelihood of decay or spoilage microorganisms.
What about mushrooms? I recently used a plastic bag instead of paper and they seemed to get all slimy. Is that typically the case? I also heard you are never supposed to wash morels, because it takes their flavor away.
Any other advice?
Are there any fresh vegetables that can be frozen for future use, when they aren't in surplus? Is there any point in doing this or are you basically going to get the same amount of flavor as you would buying good frozen veggies from the store?
