There are many threads on this site about people's individual designs, as well as less-specific discussions on greenhouse design theories that use passive solar as a primary element.
Mike's is a good one to peruse, and if you want something more generalised, search the forum threads for the word "Walipini."
I have no doubt you'll find some good leads there, and knowledgeable people to answer your questions.
