Hi,
We raise heritage laying hens and are thinking ahead to the future when we will want to retire some of them to the soup pot. I found Alexia Allen's video so amazing - so much more of a human and humane and intimate and respectful and in-touch-with-the-heart way than the processing I have seen even on small sustainable/organic farms around here. Two questions: 1) Alexia, do you ever travel to teach and 2) Does anyone know anyone who has significant experience with this method in the Western NC/East TN/Southern VA/North GA region? At some point in the next few years we'd like to host a workshop on our farm and process some birds and learn ourselves and give other people in our area a chance to learn.
