I have a container in which I have just planted a potato.  It’s a big container, though, and there is room for more plants in it.  Can I plant kale in the same pot?

I have planted kale in the open spots around my potatoes with no issue. You just want to make sure the kale is far enough away from the potato that you don't disturb it's root system when you dig in to harvest the potatoes.
