Hello Gavin. One key thing in this area is to make sure you do your moisture barriers right and that you get some sun on your structure. Without those, a house can become a mold factory. Earthbags themselves don't mold (as long as they don't have much topsoil in them) but any organic matter such as straw or wood can certainly do so. That's the reason I chose earthbag over straw bale. I've heard of straw bale houses in our climate where the truth window only shows black mold.
