On one of the recent Podcast Paul mentioned Sepp raising water buffalo. While in Iraq I had some kind of breakfast bread that was topped with cream from a water buffalo. That stuff was SO AWESOME. Water buffalo must be some super hardy critters to be able to live in such a wide range of conditions. There is a giant dump on the north side of baghdad with a small homestead right in the middle. There were always water buffalo there.

In Italy, one of the most sought after mozzarella cheeses is mozzarella di bufala...made from water buffalo milk.
Not easy to find here in the US, but if you do find it, try it...yummm.

Here is Costa Rica, we do have water buffalo. Yes, great cheese and incredible beast of burden. One water buffalo = 2 oxen, so they tell me.
