Good evening friends! Had a good Thanksgiving with my folks. I had some vegetarian meatloaf with potatoes and carrots. They were the bomb! I wanna find out if I could make my recipes all plant based Native American style. I want mine to be free from excessive oil and salt to help prolong a healthy lifestyle. Any ideas to create meals from veggie side dishes being left over? Please reach me if you all need me. Good night!

I like to mix up stuffing/potatoes/veggies and cook it in the waffle iron for healthy "waffles".

What's up man! I wanna find out if we can eat that one like regular waffles. Beside waffles, what other ways we use potatoes and carrots as main dishes not just for sides, but in the same manner as protein laden ones such as steaks, chicken and others. Could they be used alone for stews or stir fries?

Yea of course..I don't understand the concept of sides really, I have been veg for 15 years. I love making potato bowls. Use them as a base instead of a grain, add avocado, tomato, spinach etc. Or potatoes with beans/chili.
One of my favorite dishes is from Belarus, it is mashed potatoes and you add kidney beans, parsley, salt pepper, garlic powder..I don't know if it has a name.
You can make pierogies from potatoes, add some onion.
Make a vegan sheperds pie with mashed potatoes, lentils and other veggies.

Carrots for a main dish- If you want a savory version simmer whole carrots in veggie broth/Braggs..add some liquid smoke. if you simmer long enough they will be soft and we sometimes put them on a roll like a hot dog.
