I'm planting a vineyard and I'm incorporating LOTS of wood chips into the soil in a sort of hugelkultur, mulchy kind of way. But I'm worried about termites. Has anyone else had any issues with termites in hugelkultur? What can I do to ensure that they don't harm my vines?

Termites really like to eat dead wood. Living plant tissue has all sorts of sap that gums them up and they can't digest, so they stay away from it. In fact, one of the more eco-friendly ways of treating for termites is to inject the wood the termites are infesting with orange or lemon oil. Once they encounter that, they clear out. They will most likely leave your living vines alone.
