I need info about sheep please

About the only think I know about sheep is that they taste wonderful. That being said I have access to a friends 5 acres to let loose a couple sheep for future butcher. I am in Zone 8a, central Texas. if I buy from a local breeder what should I be looking for? What time is year is best to buy? I prefer a fall/winter butchering.

Is there a way I can check prices to see if I am getting a fair deal? I do not want to breed sheep, just buy 2 a year to raise and then slaughter. All help greatly appreciated,
