I am trying to find out some info on purple potatoes I purchased at a local farmers market.  They are dark purple all the way through.  I have found online that the pigment in these colored potatoes makes them high in antioxidents. 

Does anyone else have any other nutritional information about these colorful varieties of potatoes?
