If you'd like you can go about 4 hours from Monteverde to the Peninsula de Nicoya and visit PachaMama village. Its an intentional community and transformation center. Although its not 100% organic its making steps that way. They also have a permaculture course coming soon. Anyway, its a great place to visit. their site is
