Professor Rose methodically tests the Instant Pot Max to determine if it really would reach 15psi and maintain the proper temperature for the durations needed. Testing different foods and keeping detailed records, her test results suggests it is safe. Keep in mind that this was her own test and you must decide for yourself.
I plan on buying the instant pot Max pressure cooker which will can up to 4 pint size jars in addition to the other pressure cooker functions.
