I'm running out of fennel tea, and I noticed that the fennel by the sidewalk in front of our apartment was full of seeds!! So I got my kitchen shears and went to work. I currently feel ridiculously silly for ever having spent money on fennel when it grows everywhere here.

I made an apple cider vinegar dressing last week, and a buttermilk ranch dressing (using my own creme fraiche!) this week.

~ Apple Cider Vinegar Salad Dressing ~

Ingredients:
1/3 cup extra virgin olive oil
1/4 cup apple cider vinegar
1 tbsp. Dijon mustard
1 tbsp. honey
1 garlic clove, minced (optional)
1/2 tsp. salt
1/2 tsp. pepper
(I used garlic, but I did not use pepper.)

Directions:
Just place all of the ingredients into a mason jar and shake for a good 30-60 seconds, until combined (or whisk all the ingredients in a bowl).

Lasts:
If you used garlic to make it, it is best to use it within 7 days. If no garlic was used, it can stay up to 14 days.

~ Buttermilk Ranch Dressing ~

My Actual Ingredients:
roughly 1/3 cup fresh dill
roughly 1/4 cup fresh chives
roughly 1/4 cup fresh parsley
2 cloves of garlic
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt (I skipped the black pepper)
1 1/3 cup creme fraiche I had just made
enough store-bought cultured buttermilk to thin it out to the consistency I wanted

What I Actually Did:
I didn't want to bother with cleaning the blender, so I finely minced the herbs and garlic by hand and then just stirred everything together in a bowl.

I made beet kvass! The traditional beverage of my people. :D

Here's the recipe (adapted from https://www.healendo.com/fermentedbeverages):
1. Scrub and chop up some organic beets.
2. Put beets, 1 T. sea salt, and 1 c. whey in a 2-quart glass jar (I actually used a glass milk jug).
3. Fill up the jar the rest of the way with filtered water.
4. Cover the jar with cheesecloth (use a rubber band).
5. Leave it on a shelf in the pantry to ferment.
Hello! This is my first BB application. I hope that it's okay that it's for a straw badge. I promise to apply for some sand badge BBs very soon. I made yoghurt for the first time, and then I made farmer's cheese out of it (mostly because I wanted the whey).
