The best way is to use the weight of everything, weigh the water, salt and meat. I think anywhere between 1.5 and 2.2 % salt will be good. You should season with spices, boil the brine and let cool. Then and the meat at room temp or chill the brine. Keep track of your process so you can replicate and modify according to your desired outcome.

I just did the two guys and a cooler biltong, it was excellent.  Will be making much more.

Get a few books and read.

Check out the library near you.  

Start with pickling spices and tweak.

Hi Lisa

I paid by purchasing an Amazon e-gift card. Very easy and it landed in Paul's email account about 5 mins after I pushed the button, and was notified by Permies of the successful receipt about half an hour later. I would never advise anyone to send cash in the post. With the e-gift card, you also have an evidence trail of the payment, in the unlikley case something went really wrong.
