Ground beef!
Toast a palm full of sesame and set aside.

Boil a box of spaghetti. Drain and set aside.

Brown a half pound beef, drain and set aside.

Mix 1/4 cup honey, 1/4 cup tamari, 2 cloves minced garlic, palm of shaved ginger.

Cut two small zucchini into rounds thick as two stacked nickles.

Cut four green onions into 2” sections.

Sauté the zucchini Med high until it starts to soften in an 11” rondeau depth pan with palm salt and splash of olive oil.

Toss in the beef and tamari sauce.

When it is up to heat toss in the noodles and green onion.  Cook until evenly heated and blended.  Onions wil go limp and darken.

Serve with sprinkle of the toasted sesame.  

Goes great with verbena tea and slice of toast.  A splash of lime Makes it pop if you feel extravagant.

Hi!  Connecticut, Chester Zone 6a.

I’m in an old house in the middle of 14 woody hillside acres.  It’s a bit of a south facing micro-catchment.  Acidic soil filled with glacial stones.  Slowly clearing an area for some pasture.  Would like a couple donkeys.  We have three hives, herb and pollinator gardens, we do chickens on occasion.  Traditional victory garden type produce does not seem to do well.  We have a small quad with a drag harrow, waggon, and winch that gets most tasks done.  I’m hoping to find an area where vegetables will take eventually.  Mostly we live slow and garden.  The winters are either non-events or brutal depending on the year.  I like dogs.  We occasionally harvest game birds.  I make ends meet by working 30 miles away in the city at a desk which is awful.  I hope to retire to a ‘putter for supplemental resources’ situation.  I have a nice workshop that came with the property and make most things we need.  That’s about it.  Hope to meet some locals.
