I rather enjoyed reading your post, A Hobbit indeed you don't look four foot tall, and you are far better educated than any hobbit I know. That is a really decent sized fungi specimen you have in that pic, I got the impression it was a bracket fungi like trametes coccinea at first. Any how I thought I would suggest growing mushrooms in old but stable mine shafts and horizontal drives. I believe they have a lot of those in the eastern USA from coal mining, a couple in Tasmania have done just that with an old disused railway tunnel growing Shitake Mushrooms, and are doing well financially.
