We made up a recipe the other day and love it.  It's a cross between pancakes and hashbrowns.  Possibly similar to a potato pancake.  I don't know, it's just good.

Grate 5-6 potatoes (we use russett, red, purple, whatever)
Grate 1 small sweet potato (I'm sure a large would work fine)
Finely slice one small onion (try to approximate the size of the grated taters)
Several diced cloves of garlic
Two eggs
1/4 cup of oat or wheat flour (not sure if this is necessary)
Copious dried herbs (sage, oregano, etc)
Dash to a scoop of chipotle powder (optional)
1" chunk of summer sausage diced up really small (optional for flavor)
Other veg or flavorings if you like
Mix it up

On a hot griddle, make pancake sized piles of the potatoes and pat them down and tuck them in to the shape of a pancake.  Lightly press them down so they're evenly thick.

Flip after 3-5 minutes when they are getting brown on the bottom.  Press them down again lightly.  Cook for 3 more minutes (give or take).

Serve as is or with syrup.  The two of us will sit there and hork the whole batch down but I'm guessing this would feed 3 normal people.

It is indeed similar to potato pancakes. Our family potato pancake "recipe" is 10 potatoes, 1 onion, 2 eggs, and 1/2 cup flour. Grate potatoes and onion, mix with eggs and flour. Pan fry in oil. Serve with applesauce.

It is a family favorite, and a good way to use staples to make a meal. We often had this when money ran out.

I'm also thinking it will be a meal for when the chickens are taking a break and we don't have as many eggs.  That happens to coincide with the time period when we have lots of the other ingredients.
