about four years ago I planted a peach tree in our bad ground, covered around it with cardboard, and over the years have been just throwing other twigs, chop and drop, etc, around it, I'd like to plant some food plants under it.  Anyone have any ideas?  the lowest branches are pretty low to the ground, and I will have to supplement dirt on top of the years of branches..

and you can see by the pic that the weeds like to grow around the tree lol.  I am talking about the sorta clear area right around the tree in the pic...

You could try hastas/comfrey for pollinators and green mulch and will also help reduce weed pressure. and then serviceberry and currant shrubs seem to do well in shaded areas. Then a kiwi/grape vine could be grown up the peach depending on climate as well as a lot of herbaceous perennials

We mulch around our fruit trees at the community garden with woodchips and innoculated the woodchips  with winecap spawn. If you look closely at the bottom right of the photo, you will spot a couple of mushrooms. The woodchips are topped up regularly and harvesting the mushrooms doesn't harm the roots of the trees.
