While beetroots are best known for their famous red color, their health benefits are not only limited to their color, but the leaves have a lot of health benefits, too!

Historically, beet greens were used for their healing properties. Hippocrates believed that the juice from beetroot leaf bindings would help heal wounds. Today, beet greens are used in various dishes, and can be added to salads.
Beet greens are the young, leafy tops of the beetroot plant. Beet tops carry more minerals, vitamins, and health-benefiting pigment antioxidants than its taproot, and yet they come as one of the very low calories leafy-greens. Although beet greens can be gathered at any stage of plant growth, but they are at their best while the beetroot plant is young, and its stems are soft and tender. Generally, beet greens are cooked similar to their counterparts spinach and Swiss chard.

You can eat beetroot leaves raw or cooked. No matter how you choose to eat them, you could enjoy health perks like a stronger immune system, healthier digestive tract, healthy teeth , and much more. We treat them like any slightly tough green -- saute/wilt. I don't know any specifics about beet greens, but I'm always looking for more color and flavor to add to our diet because those things are generally attached to phytonutrients.
