I can't believe no one mentioned fennel seed. can you imagine Italian sausage without fennel seed?

I know I'm late to reply here. I was just thinking that most canning recipes call for equal amounts of water and vinegar. If we can get to the idea that a good Kombucha vinegar could reach 2% acetic acid, then leaving out the water in a recipe would likely get us close enough. Any ideas on this are welcome. Forgot to double vinegar to replace water.
