The Junsai Appreciation Society. We have no official organization, we just love Brasenia and want to share with other fans of the plant and its uses.

Contributions to this collection will range from anecdotal to empirically repeatable.....with everything between.

I sampled some bread & butter Junsai Pickles at EPIC:Farm to For in the Ozarks by Ozarks Small Business Incubator. West Plains, Missouri
Springfield Community Gardens recently helped create the Water Queen logo. Looking forward to trying the tea today.

Junsai also known as watershield or Brasenia schreberi, is an edible aquatic plant with a gelatinous coating that is popular in Japan and China.

From the Water Queen, "My goal over the next month, or so, is to 'teach' anyone who is interested what We are learning.

It will be as little 'raw', because we're doing and learning, at the same time. But hopefully,  it will help others start their Junsai Journeys, with more successes and less painful 'learnings'.

Please feel free to share any Junsai/Brasenia experiments that others are doing, in the FB Group: Junsai Appreciation Society. This helps us all learn faster too.

There is a closed flock of Australorps in West Plains, MO downsizing. Chicks available at end of March too. Advertised on Craigslist.
Seems like there is a farm in Thayer that has a number of heritage...
