So I just got 2 yard of fresh cow manure.  I will only be composting half of that with shredded leaves.  What can I do with the other half without to much work?  Cover with tarp and let it age?

I would add it to the compost pile. If not now, then as the pile shrinks.

I would think it would be okay to let it sit & age, but at the same time, I've made piles of fresh rabbit manure about the same size, and it didn't take long for it to become a paradise for flies and their maggot offspring. It also smelled quite strong (and not in a good way).

I would find some source of carbon to mix, or at least cover, it with. Wood chips, dead weeds/grass, leaves, etc. Then, when the other pile you blended with leaves begins to cool down, it may help heat it back up if you add some manure from the uncomposted pile.

Or, there's always the option of spreading it out into a row or bed where it's a few inches deep, letting it cool down, and making a worm bed out of it.

There are definitely lots of options for using it!
