I finally documented my hoshigaki process and posted it to YouTube:  

This is probably the 6th or 7th time I've gone through the process and we refine it a little bit each time. With the 4 persimmon tree's finally starting to bear fruit I'm beginning to think about how I can make this drying process more efficient. Ideas are definitely welcome!
